I dried a bunch of thyme. Dont really use it much though. Also dried other things using your method. Got a bunch of sage. Sure wish I would of got that basil going before plant died off. At least I got a bowl of Pho in.
 
Dumb question. If I buy japs from store, can I turn them red by sitting in the sun? Or no deal as they need to be on the vine?
 
I just let them sit on the counter . Normally you like them to be starting to turn . Not sure if store bought work the same way , but I pick and just put them out of the way on the counter . No sun . but natural light .
This is from last year . Serrano , fresno and Japs .

These are from this year . Letting them completely dry for powder .
They were all green when picked . Gonna slit and put in the oven today .

THANKS No idea why I like the red so much better. Looks so much better to me in say pickled eggs or sausage.

Yes, but only under limited conditions.


If you pick a mature green jalapeño, it may continue ripening and turn red off the plant because peppers are climacteric enough to continue some color development after harvest. However:


  • It will usually turn red more slowly than if left on the plant.
  • The flavor may become slightly sweeter and less grassy as it ripens.
  • It won't develop as much additional size or complexity as a pepper that ripens on the plant.
  • If the pepper was picked too early (immature), it may never turn fully red.
