    That's right I had to get SWMBO to order more Tatonka Dust,and she finally did!! So I cleaned off a Tri tip dusted it well with Tatonka Dust and its in the WSM waiting to get the reverse seat treatment! Smoking with cherry and some maple left from some chicken wings.

    Pretty piece of meat, B! I've seen that term "reverse sear" a few times now and have been too lazy to search it. I see you're using a WSM; Is it a charcoal cooking term?

    Thanks, a reverse sear is where you smoke the meat then sear it rest and eat! Brining it up to temp in the smoker gives the added flavor and also cooks the meat nice and even.

    What IT did you take it to?  Got my significant other to order some Tatonka  dust for me.  I want to try it on a brisket.

    Really a great looking job. Its so consistent it looks like a sous vide / seared .......  Really impressive.

    What is that side on the platter?

    Took it off about 125 then rested! I would coat a brisket with dust but SWMBO is not eating brisket currently. Mossy Mo did a nice brisket with it!

    Thanks Duke,only as of late did I ever see them and they were around $10.99# for the most part,then our local Gordon Foodservice Store started carrying them in bulk with prices from $2.65-$3.55 for the most part I just buy a bag almost every month or sooner there a great and easy smoke!

    Thanks Foam! The side was gnocchi,the wife made it! Sauté some bacon then cook some mushroom,garlic and onions in the bacon fat,of course,toss the cooked gnocchi in deglaze pan with broth top with crispy bacon. The wife tossed some spinach in her's. It was pretty tasty!

    Thank Al,I can usally knock out a pretty tasty TT,though I did post a blunder once or twice think I titled it Well done Tri tip it wasn't to pink but we still ate it.
