Hi

Have done some hot smoking in the past but have now decided to get “cool” so the grandchildren say. I bought a small electric smoker and spent a few hours reading up. Conditioned it and then smoked some haddock fillets. Oh, They were awful! Over cured over smoked. Need to read more. Now have some pork bellies in ‘Pops” brine. Patience. Wiltshire ham,bacon is pretty good so high standard to achieve. Reading and learning. Having fun. thank you and Hello.

Just keep trying.

Oh, I always eat my mistakes. That way nobody can tell it was a mistake. :D

Mistakes? ..Children?.... I love them but I couldn't eat a whole one!

Although they say,’when they are three you could eat them’ When they are sixteen you wished you had!

Anyway joking aside. I do hope my humour travels.
