      Hi sonny. Thanks for your feedback on my newbie post. I am interested in smoking salmon mainly and maybe some marlin. If you have any recipes or tips you’d like to share I would appreciate that.

      Would like to try and candy some salmon next week.

      Sonny, Can you confirm the controller I have ordered is adequate at 10 amps? 1200w element, 120vAC, PF1=10amps? do I need a "cushion"?

        Looks like it will work.
        If you have concerns, you can cancle the order, then reorder the 30 Amp rated device.
        It's a few dollars more, but not as much as having to replace one you fried. ;^)

    Astrophotography, smokin salmon and cheeses.
    Useta go fishin. EnviroMENTALists ruined that.
    Retired. I was tired yesterday, and I'm re-tired today.
    As a child my Dad made sure us kids got to try a lot of tastes. One was walking out on the Santa Monica Pier and he'd buy whatever smoked fish he could afford at the time from a fish vendor. Usually Albacore was about the limit.
    I always liked it, my sisters never did, so more for Dad and I.
    I've had many different homemade smokers over the years, old enameled refrigerators, large electrical boxes, and converted Bar-B-Ques.
    My favorite is smoked Salmon, and my favorite wood is Hickory.
