Hi there,

I have been searching offset smoker information over the internet the last month and ended up here so often that I realized it's time to register. Seems to be a place with lots of good answers.

I live on the Swedish west coast and am in my late sixties. Been smoking and cooking outdoors for many years. Started with a Bradley electric and then a pellet smoker that gave up on me this spring. I am also a happy owner of a Kamado grill that is exercised regularly.

I am now waiting for an offset smoker that is built by a guy in south of Sweden. I had a lot of smoked meat in my childhood, but not by the "BBQ way" of smoking. My grandfather and father had smoke houses where they smoked meat from elk mostly. When my pellet smoker gave up I considered to build a smoke house but ended up buying an offset instead.

I am now planning for the arrival of the beast, some 200 kg of unpainted steel. Have been reading threads on preparing a new smoker and will go with boiled linseed oil on the raw steel. Looking for wood supplies in my vicinity, there seems to be some at least. And then the big question is what will be the premiere dinner from the new smoker. I am a big fan of ribs and hot smoked bacon. I guess something like ribs is a good way to learn how to manage fire in the smoker before graduating to bacon and brisket.

Ribs sound like a great start! It's hard for me to imagine Sweden. We dont really get a lot of information about it and I seldom think to research it.

It seems like you have a good life if you are smoking meats and having a Swedish-built custom offset made for you. I see Gothenberg is on the West coast. Are you in a rural area? It always fascinates me as to what life is like for regular folks in other countries.

I've been to adjacent Norway, almost 40 years ago, a couple of times, but it was for my job and we spent most of the time at sea but flew our gear in to Bergen and loaded the ship there. I think Bodo was another port we went to. I think thats above the arctic circle? I got a certificate up there somewhere for crossing the arctic circle. Got to experience the feel of bieng on a large work ship navigating through fjords. Beautiful part of the world. Wish I had a chance to really experience it. Had some great meals on shore but it was all at the direction of and control of the Norwegian equivalent of the American CIA. Everywhere we went we were "handled" and the Russian spies were brought to our attention when we went out somewhere...we had a standard "line" or story we were to tell when anyone approached us at the bar, etc....Brings back a lot of memories.

Well, you have some stories to tell, that's for sure. The Norwegian fjords are spectacular. I have a defense background too so I can relate to your stories about being "handled". It was definitely different 40 years ago - even in Sweden.

But, getting closer to retirement I try to live the "good life" which means I can spend a few hours by the smoker or grill to cook up a good dinner to me and my wife, or to kids and grandkids if they happen to be around.

Life in Sweden probably isn't that different to life in Virginia - if you compare it on the global scale. I am in a "semi-rural-area" which means I have 15 minutes by car to the center of the second largest city in Sweden (which is small on an international scale) but I have a forest outside my house and it is not that uncommon to see elk in the backyard.
