I deboned a butt and tied it up.



Brine mixed up.



Using a 10% pump so this is what needs to be injected.



All injected.



And into The Briner



In my project fridge for 10 days.
 
I am smoking two boneless pork shoulders. Both are 4.5 lbs. Is cooking time equated for 9 pounds or 4.5?
 
C farmer, did you use TQ or #1 in your brine? I just ordered some #1 for my pork bellies, and I have a boneless butt that I want to brine and would like to use #1 in my brine solution.
