Haven't done this in a while, but it turned out pretty darn good. I love the pulled ham part. It's so decadent and fatty like a ham isn't. That said, I've been messing with smoking thick bologna slices, and this is boars head garlic bologna sliced about 1/2" thick (4 slices were 1.4lbs) and smoked on the bronco over cowboy briquettes and a few small cherry chunks. The smoke overpowered the garlic, but I'll be eating this again.

Anyway, I boned a pork butt and halved it for bacon and butt ham.

Zero before pics, but this is the post cook shot. Standard issue bacon cure, pulled at 12 days so I wouldn't have to smoke in the rain and wind a low grade nor'easter is making today.

Right side is the pulled butt ham.

Smoked both halves to a bit higher IT than normal, but I didn't take the ham half all the way to temp. Threw both in the fridge to cool. Sliced the BBB today, but put this in the oven yesterday covered with the pineapple juice and slices until it was tender enough to pull.

No pics of the sammich I ate from this, but it was quite tasty with a bit of swiss melted on top.

Thick sliced the buckboard half, vac sealed it all including the trimmings and the un-pulled butt ham.

That's fantastic looking butt! I take thick sliced bologna and grill it. Substitute the bologna for hamburger patties. Makes hamburgers much cheaper and taste great.
Thanks, It came out quite well! The cherry pellets really help the color.
I do love me some thick sliced bologna. Makes for killer burgers!
