Treat Belly Like Butt?

There is a host of Youtube videos on smoked pork belly. It's apparently a whole branch of barbecue. Malcom Reed cuts it in cubes and fries it in butter and brown sugar.

Looks good to me, but I can imagine the meat being a little dry with the temp you took it to...

I switched over to lump charcoal in my OKJ offset and I'm never going back!

I figured it would work, since it worked with pork butt, but maybe I should listen to you. It's not like I'm racing for a prize.

Well...wait...I spent a lot of time today down around 250, so maybe I should take all that back.

I can see that, but you're emphasizing the fat only. I can't see that. I'm considering making some homemade bacon in the future. Eating other forms of cooked pork belly isn't really for me. Other than bacon, I prefer mostly lean meat.

Today I made sandwiches with pork butt and pork belly. As good as the butt was, I have to say that for sandwiches, the belly was better. Didn't need nearly as much sauce, and the fat made it slide right down the hole. Reminded me of pan con lechon. Very nice. I think I am going to make pork belly my main sandwich cut.

Also, pork butt can have slight hints of gaminess, but I didn't get any of that with the belly.

I think it would be neat to combine pork belly with rib meat on a sandwich, on big pieces of garlic bread. Maybe toss some pickle chips on top of the meat.

I tried Southern Living Carolina Gold sauce on the sandwiches. Only brand with "Carolina" on the label I could find here. Mustard, brown sugar, honey, and some other stuff. No tomatoes as far as I can tell. I thought it was very nice but a little sweet, and it needed some heat to put it over the top.
