So I set out to do a no-wrap butt. Got a 10 pounder and a recipe. Rubbed and set in fridge overnight. Started at 4 am, 200 degrees for 8 hours. At noon, it was at 138 int temp. Per recipe, bumped it up to 225 for the duration. Well, at around 4:30, it was just at 155, the stall. I'm impatient. So I bumped up the temp to 250, got it to 161 int and wrapped it. Pulled it at 201 int temp, around 7:00 pm. Let it rest an hour and a half or so. We already ate dinner so this would wait until Sunday. Turned out great. Next time, 225 for the first 8 hours, then 250 til the finish. NO WRAPPING !
PIcture 1, after the first 8 hours. Picture 2 ready to pull. PIcture 3 pulled.

Looks great! I ran like 10 butts one year for daughter's grad party. I did 1 or 2 at a time trying all sorts of things and learned a LOT. Main thing was temps made no difference in final product. All took about the same time which was a long time 15hrs on average. Few years later I was inspired by someone here and cut the butt in half. OMG no other way! Totally done in 8hrs and 2x more bark. 2 HUGE win wins! No idea why this is not more popular.
