Hello all.

Been a lurker for a few years and finally started to get involved a bit.

I am from Blenheim Ontario, a little town an hour from the Detroit border.

Purchased a MES 30 with the glass door last may. Have tried a few things. brisket, ribs and double smoked hams just to get my feet wet.

Harder being a smoker where I am at as supplies are not readily available.Have to head over the border to get a brisket or special order it here and pay an arm and leg for it.

Ordered an Amaze-en pellet smoker from Todd  last week.Had it shipped to a sister in NC for pick up when I go on holidays Mays 5. Thats where my first question comes in.

Have never saw pellets available anywhere here so I need to order some. Dillema is to get from Todd, BBQr's Delight or Pitmaster Select.. Figuring to order 40 pounds as I am figuring that should get me through a summer? or will I be using more than that?

My intention for the year is to get into sausage making but I need a too organize a of ingredients needed to purchase and have it all shipped down there. If anyone can help get that list would be great.

What I know is I need cure#1 (1LB), breakfast sausage casing, (size and type?) casing for brat type sausage (size and type?) casing for polish, kielbasa german (size and type?)

Next on my list is bacon. Have a few Oriental grocery store that opened withing an hours drive and I have seen pork belly on sale for $1.99 a pound so I plan on picking up a whack of that.

Will be using Pops Brine for this and maybe a dry rub for comaprison.

Pork loins can be had for a $1.79 to $1.99 so that will be for peameal.

 Still find it funny that its called Canadian Peameal down there but to me it looks like ham, nothing like out peameal....lol.

Thats enough for now I am sure you will see popping up all around the forums asking questions. Questions are really needed though as doing a search has always answered my questions along with the extensive wiki

One other  thing. is the mailbox mod necessary or will I get good results for bacon with just the amps

Thought of one more thing.

I noticed there is no group for Canadian smokers or maybe ontario smokers. Is there a way of checking membership to see how may Canadians on site? would like to brain pick on where they are getting supplies etc.

Hi fellow Canadian. I am relatively new to this forum too. I don't know if there is a way to search for Canadians but I have run into a few just by reading the new posts. I am also sure you will get good information for your questions. I have had great advice and inspiration from the forum.

While I am glad to see another Canadian on the forum, but a Leaf's fan? Are you into disappointment?
