Pork loin was $1.40 yesterday and today, small 8.25lb/$11.55 will make a bunch of meals. I like brining tenderloins (or sized pieces) for a quick meal I can cook anywhere and with anything.
I'm used to bigger ones with more of everything attached.
Fresh lemon thyme, marjoram, rosemary, oregano mostly. A tiny bit of lavender and tarragon. Salt, pepper, 1/8tsp prague #1. Shouldve thrown garlic in the skillet at the end.
Seared in cast iron, transfered to thin baking dish and went into a 400* oven on "convection roast"
Potatoes were fully boiled, smashed a little, salted , then threw some butter and a rosemary branch and potatoes into the cast iron and into the oven. Sorry for no pics other than my plate.
