My daughters decided to come a day early for fathers day and the wife's birthday is Monday so i thought it was a great time for a smoked prime rib!!! I started this project with a 7 lb. choice boneless prime rib roast. This was a great piece of meat. I coated it with pepper...salt ...garlic powder and onion powder and rested in the fridge overnight. I preheated my MES to 260...filled the water pan with boiled water...filled the A-MAZE-N with hickory ....lit both ends and went to the house for the roast. I dropped the temperature to 225 in the MES and added the roast.
This roast cooked a bit faster than i expected...At the 3.5 hour mark {12.30} the IT was at 127 so i backed the Mes down to 165 to slow the cook as we wanted to eat at 2;30. I opened the door to drop the temperature until it read 170 on my maverick. This really slowed the climb on the roast and it coasted to 132 IT at 1;45. I took it into the house for a 30 minute rest. After the rest let the photo's begin

Done just as planned...nice and pink from edge to edge,,,It's time to EAT!!!
My Plate...Nice slice of prime rib...baked potato...crab salad and Yorkshire pudding. This was a Fantastic way to start the weekend!!!
