I got the InkBird INT-11P-B wireless thermometer in the mail yesterday and tried it out today.
The bride and I decided not to have our usual ham and opted for a small 2 bone prime rib. I seasoned the roast early this morning and let it rest in the refrigerator until it went on the smoker at 2:30 this afternoon and i basted it with garlic butter every half hour. It ran along at 250ish until the IT hit 127. Wrapped it up and let it rest while the bride finished the sides.
Now, about the InkBird, I like it. It was fairly easy to get it attached to my phone, and the app is pretty straight forward with some good info contained within it. I ran a wired thermometer in the pit the entire time and they were within 3 degrees of each other most of the cook. The pit temperature on the probe reacts FAST. When I would open the dome to baste, the graph would almost immediately start falling. When the probe showed that I had hit my mark of 127 IT, the Thermapen indicated 128 when I checked, so overall, the thermometer seems pretty accurate.
I'll do a few more cooks with it to see how it holds up, but as of now, I'm happy with it.
