Mother Nature isn't cooperating lately so running the smoker has been out the window... getting stuck inside my kitchen hasn't been too bad though... Haha!

Besides Mexican, I'm a big fan of curries in the kitchen. I am 100% partial to a green Thai, but they're all good. Nice way to use up not-quite-enough amounts of produce, too.

Looks great and there are more ways to cook than smoking lol , that red beans and rice looks great, I been 1/4 my sausages up for a long time so I can get a bite of rice/beans and every thing at the same time, I could use a bigger spoon but its hard to change lol

also you get more sear on the sausages as more sides hit the pan.

I did quarter up about 1/3 of the Andouille for exactly like you said.. to get a bit of sausage in every bite. No crispy edges on these ones as this version was made in the crick pot!

That red beans and rice had me licking the computer monitor. Of course it all looks great.

Thank you! Better clean off the monitorthough! Hahah

Looks great. I have become a huge fan of Birria Tacos

Yes! The problem is.. there's SO many recipes out there it took me awhile to pick one to follow. I shared some with my neighbor who's always very honest in her reviews and she was head over heels about it. She did say it needed some salt and funny enough there's not salt in the recipe I followed. Now I know for the next time!

Just the opposite here,we've had one of the driest Springs ever.Never seen so much oak pollen in my life. The first real rain in quite some time will be hitting us all weekend.

And still being out of work after the hernia op I've been putting everything in the smoker.A smoked and grilled hotdog ain't bad!
