Disneyland-Style Turkey Legs, Viper1's Recipe

    I've been wanting to try these for a while, and finally found some turkey legs on sale. It's odd; around here you can find whole turkeys and breasts everywhere, but hardly ever wings or legs. I wonder where they go?

    Anyway, they came out great! I haven't been to Disneyland in years, not since the kids were small, but they do taste very close to how I remember them. Although, I have read that the ones at Disneyland are brined with liquid smoke, and then baked. [​IMG]

    In the brine. I was happy to use up some TenderQuick that was in the pantry. Now that I have cure #1, I rarely ever use it.



    Soaked, dried off, and hit with a bit of Pam and paprika.


    The lower two legs must have come from Birdzilla! There were at least 2.5 lbs. each.


    Into the MES 30, with a 1-1/2 rows of Pitmasters Choice in the AMNPS.


    At the 3 hour mark.


    And done! Took about 4 hours at 225° to reach 165° IT.



    Plated, with a good hefeweizen! This was one of the "small" ones.

    (Notice the coupons in the corner? KFC can suck it! I'll take one of these any day.)

    Did you know they used to have a tool that pulled the leaders/tendons out of the turkey legs?

    Ok, Its Renfest time, bring on the jesters!! Wench fetch me another tankard of ale, (and cinch up the boustiere up a bit higher)!! This is the point where I usually get slapped!!

    Did ya hold it and swing it around while talking when eating?

    Mmmmm... good smoked turkey legs! Its an attitude adjustment!

  7. Those are huge, but they looks very tasty! Can't find them locally here, unless you want already cooked and smoked.

    Yeah, I don't know where the other parts usually go. Pet food, maybe?

    Normally it would be embarrassing to have so many people compliment your legs but these really deserve it. Great post.

    That tool is still available from an outfit in the UK.......about $100 if I remember right.

    During "the season" when turkeys are in all the stores, my local grocer will break down birds into parts........wings, thighs, drums, half and whole breasts........backs get bagged up for soup stock. He said that the only other time he gets call for drums is during fair season and he will order then in by the case.
