Had terrible luck finding good ribs this time of year. Guess the butcher shop didn't hear it was going to be 60+ degrees in February. Perfect weekend for new toys.
Finally settled on 3 racks of baby's that didn't look horrible. Bathed in maple syrup then heavily dusted in Jeff's rub. As many times as I've eaten it, never disappointed. Recruited my oldest son for assistance.
DigiQ installed and ramping up to temp.
I love how it brings up temp slowly as to not overshoot the target.
2-2-1 will be the theory and wrap with apple juice. I usually don't wrap so we will see what turns out. More to come after its done. Still have to make the maple bourbon BBQ sauce which I also got from this site. Slightly tweaked but but kudos to the creator. The whole family loves it.
3 hours in and this thing has been rock solid. I thought maybe the display was stuck so I pulled out the ET-732 for back up.
Apparently the display works perfectly and I have trust issues. More to come when it's plated up!

Time to add the char!

Plated and ready to eat with collard greens, mac n cheese, honey cornbread

When estimating how much to cook for dinner, I always add 1 full rack for lunch tomorrow!

I could handle a plate of them,settling for left over ribs Wed. I check my pit 10 times and wonder if I'll ever learn it is right on Points
