Hey there...long time member who hasn't posted in over a decade...lol. I've still been cranking butts and ribs out of my trusty old MES and occasionally my WSM. The other day I got the urge to smoke some beef for Christmas eve and decided on this 5lb Prime grade ribeye roast I found at my local Sam's.

This morning I gave it a rub down with JB Fatboy's Cowgirl Rub and put it back in the fridge until noon, then let it sit out for about an hour while the MES came up to temp. In it went at 230 and I fed pecan chips all afternoon.

After about 4.5 hours, a stick with my Thermapen showed 135 in the center, so I threw in in a 450 degree oven for 12 minutes to help it crust up a bit.

Another half hour of rest later and I sliced it up and we were eating good! Thanks for checking out my cook!
