Other day i mixed up 5 lbs of Owens BBQ Cervelet SS. Yesterday the folks down from us are from Alaska. hey said what are you smoking? Cervelat SS.

I took them a vac sealed chub today and he gave me 2 packs (4 fillets) of fresh Alaskan wild flounder fillets.

It a poker. Larding needle.

Poke thru the meat, put twine in the hole and pull the twine thru the meat, make a loop and hang. Use it for my biltong.
