Awesome man!!   You gotta share the recipe!      Love your setup.   Happy smoking my friend!

Just kinda made it up but it's pretty good. I was just wanting to do something. I smoked a block of cheddar and the fish for a couple/three hours each. Of course the fish wasn't cooked and didn't feel like canning it after I got messing with fixing some water lines under the house. I put it in foil in a 400 degree oven for an hour. Cooled it in the fridge while I went to get more PVC pipe.
Mixed :
cream cheese
Garlic
Garlic salt
Cayenne pepper
Lemon juice
Chives
Smoked salmon
It turned out pretty good. The cheddar was wrapped in plastic and refrigerated. A little went in this mornings eggs.

Could use some minced onion for a little crunch and something to thin it out. May be a little sour cream. Don't know. It's thick like a cheese ball but good taste.

Nice   and a beautiful smoker

Hold up on the car wash! I need to finish this one first.
I got some two inch angle and 3\16 plate to make my bottom door out of. I hope I can get by to pick it up in the next day or two.

So I still need to build a proper door but I used the brick plug for the time being.

That is some good looking yard bird my friend!!

A little dry rub last night then back in the refrigerator.

4:15 wake up call and coffee. Let's start warming things up.

Load up the top shelf and see what happens.

To catch the smoke on camera I have to backdrop it against this tree.

Must be the dead road killed skunk I've got simmering on top of the chimney cap. I'm here low to the ground, smelling the goodness seeping out from around the door, and they get simmered skunk butt. Give it a try.

Here is a shot if how I've been regulating air. I have five different sizes of brick to rotate to close off the air.
