Bottoms up!

    Picked up a nice bottom round. I have been craving a good french dip so why not!

    Fired up the mini with KBB, cherry and Kiawe. Keeping the temps low to get max smoke on this guy. Seasoned all sides with salt, pepper, chipotle, and garlic. Will pull it at an IT of 130. Let rest for 30-45 and then it's game on!

    Thats a fine looking sandwich Case. Wasabie/horseradish great. But I love that fancy dippin sauce!

    Great job, I will have to add that to my "things I have not had to too dang long" list!

    It'd be just like when I was a charter boat captain again! Ha! Bet there wouldn't be any puke to clean up though, or at least you'd hope not!

    Case, the food looks absolutely delicious!  And as usual your close-up photography skills make it look even better.  

    I don't have a bottom round, but I got a chuckie that may get a similar treatment very soon!
