Had some friends over for my 30th birthday yesterday and I smoked up some side ribs with chicken drumsticks and whole wings. I used Jeff's method for his Honey BBQ Smoked Wings recipe for the chicken. Coated with Jeff's Rub for 2 hours, then a buttermilk brine for another 2 hours, then applied more rub and tossed them into the WSM with the ribs for 2 hours. Applied a Jeff's Sauce/Honey Garlic mixture and put them under the broiler to caramelize.
As for the ribs, I coated them in maple syrup and Jeff's Rub and smoked them at 250F with hickory unfoiled for 5 hours and served them naked...These turned out to be the best ever, no sauce needed.
Friends brought homemade gnocchi with pesto and marinara for a side (first time trying this and it was damn good!)
Ms. Duke had quite the cake made up for me, I think SMF will enjoy it!
