Pork Loin Skewers

My wife and I finally tired of slicing up pork loin for meals and just wanted something a little different. so we did the following.

1. Brine it overnight
2.Butterfly it so that it is about 1 inch thick
3. Cut it into strips about 1 inch wide
4. Place the strips in a plastic bag and add Jeff's original rub, shake and coat all the strips well. Let rest in the refrigerator for about 2 hours
5. Take each strip, wrap with a bacon slice and put on a skewer
6. Grill or smoke until done
7. Enjoy - bacon is crispy, meat is tender and delicious.
