So I went to Costco with the wife and son and he saw this and says dad you got to smoke it!

The belly was prepped by slicing it into 5 slabs and scoring them at 1inch

Each slab was rubbed down with a mix of 12tbs of Jeff’s Big Bald BBQ rub and 6tbs of brown sugar. Each slab was held to open up the scores to let the rub get into the cut.


After its massage it got all settled in for a good nights sleep.

In the am it will go on the copper pot for a little smoke. I’m so hungry!
 
Looks like you are off to a great start. I prep my pork bellies about the same way.

Thanks! I have my fingers crossed. Hoping for 2 portions per slab, thick cut, so each get 2 ends and a middle.

LoL yea going to pull them @ IT 190-195 just like PM did his.....although he will have to fight the boy for a share. He is so possessive of it I’m not sure I’ll even get a piece, thanks for the like!
 
Seems to me that Belly with bones in it are called...ribs. LOL!

Very true! That means that belly could just be called boneless ribs or rather “south side of the belly ribs! :emoji_laughing:

Ok now I know this was a very bad idea!! I’ve eaten a lot of meat and I just don’t have any words to explain the velvety buttery goodness! :emoji_yum:
 
Fried Pork Belly Breakfast! Just NO words!

Started with inch thick slices

I’m left rather confused though....not sure to bless Preacher Man for this experience of heaven or tell him he needs to do some repenting because anything this good has to be evil LoL, as it was his pics that inspired this experience props to him!

As I said just NO words!!! I would pay $40 a plate for what I just had for breakfast!!!!!

Thanks for the shout out, and I'm grateful to have given some inspiration...but you took this to a completely new level that far surpasses anything I cooked up!

This Big Bald BBQ rub...is that the one you purchase from Jeff?
