A co-worker is moving today & asked if I would maek her a little care package. Well how do you say no to that. I was extremly busy with the wife gone & the boys baseball practice but I did manage a finish shot! Almost forgot theres tri tip too !!!

thanks guys! Its hard to see from the pics but I double sided the spam, One side was all chipotle & the other was brown sugar. came out nice!

Did you do anything else to prep the spam? I wanna try that. I think the wife would certainly approve of me smokin this weekend.
 
I just diagonally scored one side (not all the way through) then I blend my chipotle peppers with adobo all together. I put that all over the scored side & inbetween. the other side that was flat I just pressed into a bunch of brown sugar. Put it in the smoker 225-250 for an hour or two until it starts to open up like an onion. It was originally in my head that they could start eating the hot side & end with the cooler, sweeter side? It didn't work that way but evrybody still enjoyed it
