So its that time again I guess, friend brought some apricots. Though in good condition I can tell they have been shipped and held because the fruit is pretty dry. I love a good challenge. Quick run thru then we'll talk.
Don't they seem to glow? These were without a doubt my Mom's most favorite fruit. I've seen her eat the dryed apricots out of a bag.
And not just a few either!
That's like a ridiculious amount. You think my friend was hinting they would like some jelly made too?
There is all that nasty prep and gathering, its what takes so long when doing things. heck I think clean up is easier than gathering and preping.
Sterlization........
I always do the first batch according to Sure-Jell.
Now its time to break out the old tried and true short cuts to make better jelly!
I have an old "Oscar" I use for fine grinding and this one is the fuller size and with this attachment it makes jellys and marmalades so easy to make.
It also induces juice out of dry sand!
I seriously don't know what that is made for? Maybe shaved ice?
Well it is much easier to use and so much more efficent!
Look how many apricots are missing after making one batch and cutting up another with the Oscar! LOL I only have 15 pounds of sugar and 3 cases of jelly jars. LOL I always try to keep that much around just in case "makins" happen to appear unexpectedly. Looks like I will have plenty left for some apricot Liqueur..... <raises eyebrows and does his best Grocho Marx>
That is all the pictures...... I want tell you all that a couple a years back I smoked a beautiful turkey (well of course I did), and stuffed it with the old maserated apricots. OMG you have never tasted something that good, I promise you, well not on this side of heaven. And that first jelly , made to Sure-Jel instructions. It will make great pork glazes.... There is nothing wasted around here!
Think I'll go make one more batch of jelly, then look for some kind of "juice" to pour around the rest of the fruits.........LOL
