I used one of those with no mods , for alot of years . Put out some great food . I bet its gonna do good for you . Nice job . 

I'm gonna say chicken .

Oh yes that looks very ready. Maybe for a break-in, just try running it with nothing, just to see how it behaves.

I had the same idea!  Once I get awake (Trouble sleeping last nite)I am going to brine this bird and get it ready for later tonite. Spatchcock it and we will see!  I am going to fire this bad boy up to see if he behaves with the temps, then reheat it up later and cook that bird!
