Biggest brisket I’ve seen. Very nice shape to it with thick flat. I’m going to turn it into pastrami. Just trimmed about 2-3 pounds off it and about 1-2 pounds off the smaller one. Choice grade angus with nice looking marbling on both

I’ve done a few of those monsters before. The stall can be huge. I’m in the pan or wrap camp here.

Came out very good. It actually stayed on the cooker 3 hours after the pic of the two briskets. Took 16 hours since I didn’t have it pegged at 250. Was a bit lower here and there
