Deep Fryer Chicken and Hush Puppies Plus Useful Fryer Info From Bayou Classic

I have useful info from Bayou Classic RE deep fryers, and it's not in the manual.

I had problems with my fryer, and one was that it leaked through the drain valve. I contacted Bayou Classic, and they gave me help with the gaskets.

The gaskets aren't just washers. Each one has a round boss on one side with a smaller diameter than the whole gasket. The fryer comes with two of these. The small end on each gasket is supposed to face away from the fryer. The one against the fryer's threads has the small end against the valve, and the one under the valve has the small end against the drain hose.

I am still losing maybe a drop of oil per hour, so I am going to disassemble the drain parts and make sure the gaskets are installed correctly.

It was a big relief getting the fryer running again. Tonight we had spicy fried boneless chicken, hush puppies, and coleslaw based on Robert Irvine's recipe. Very nice. I put orange blossom honey on the chicken.

My wife is African, so she often has a different take on things. She put Marie's blue cheese dressing on the hush puppies and Nando's garlic Perinaise sauce on the chicken. It sounds weird, but it all works.

I have had a lot of struggles with fried chicken, but I am finally satisfied with this recipe. It was spicy and crunchy. Now I won't feel so miserable when I want chicken and Chick-fil-A is closed.
 
It appears I was wrong about my fryer leak. I thought I was still losing a drop or so every hour, but the fryer has not leaked since I fried that chicken. I guess a drop or two of oil was stuck in the drain tube and came out after I reinstalled it. All is well.

Tomorrow, Cuban-style masitas de puerco and deep-fried plantains. You pressure-cook the pork chunks to tenderize them, and then you fry them to improve the outside.
