The excavation business doesn’t leave a lot of time in the evening sometimes to get supper done, so did some hot and fast spare ribs and a vodka sauce over angel hair pasta. Just a quickie.
Vodka Sauce.
Dice half of a medium onion.
Mince 3 or 4 garlic cloves.
In a sauce pan add a little less than 3Tbs of cooking oil (I used EVO)
Add some red Chile flakes (I used Chile Carribe)
Saute the onion garlic and Chile, no salt until translucent. Then add 1/2 c. Vodka, and 1 quart of canned tomatoes crushed by hand.
To that add 1 cup heavy cream (can use half/half or milk) and the juice of half a lime. Simmer about 25-30 minutes to reduce. Then add a Chef’s portion of 1/2 c Parmesan/reggiano stir and remove from heat. The Parmesan will stick to the bottom of the pan if cooked too long. Just melt the cheese and take off heat to rest.
