Roadside marinade, spatchcock and rotisserie for the "Tri-Fecta Chicken"

The pineapple part way through i sprayed on evoo and sprinkled with cinnamon and sugar. 

Pics coming. 

Oh only took 1 pair of OctoForks and there's space to rotisserie lots more...kinda nice!

Looks great Keith! I was just looking at the roadside recipe this weekend. I have to cook 40 pounds of boneless skinless thighs for the inlaws 50th.

Thanks Case.  It was a nice change vs the standard old rub!    Sounds like a winner for a big party like that.    BTW with 8 tines going into that spatch it wasn't moving. I like it!
