OK, I have been drooling over prime rib posts, and looking forward to Christmas eve dinner( always a big prime rib). I have never smoked a beef roast, and had concerns about wasting a beautiful chunk of meat for learning sake, so I went up to the store and picked up a bottom round roast to "practice on". The roast tilted the scales at 3.8 lbs, and looked pretty decent. My plan is as follows
-Patted it dry and rubbed with corn syrup and Montreal steak seasoning
-put in the big chief with alder at 1(no water)
-will pull at 120 and let stand( shooting for an hour)
- just prior to carving I will stick it in oven preheated to max setting for 8-10 minutes
- serve with chef jimmies au jus( have some frozen), horsey sauce, mashed taters, and a veggie TBD.
- during this process, I intend to keep watching the steeler game and smoke my cigar ( nub Caine).:cool:

Figuring on it climbing 10-15 while resting, but yes, no qualms about eating what I want and riding the rest home!

Baby was stalling at 110 for a while, so I moved it into my garage and insulated it, works every time :cool:

Just hit temp at 4:45, pulled wrapped and on course for an hours rest, then into the oven for a full on sear! Smells fantastic

Out of oven oh my god!!!! Can't wait for the sides, let it ride in oven for 15, the IT didn't really climb while resting.

OK, fifteen was to much in the oven, scale that back to ten or so, but still okay. And I overcooked it a little by mistake just throwing it into the oven to stay warm. Oven was off, but residual heat managed to cook it off. Still though
