Tasso for breakfast (out of bacon)

I've been home all week with my bride since she's recovering from spinal fusion, so I've been playing nurse, housekeeper, and cook.

This morning I realized that I hadn't pulled any bacon or sausage from the freezer for breakfast, so I improvised and cut some tasso thinly and fried it up in a skillet. The bride loved it!

With it sliced thinly, it wasn't as spicy as it is in chunks, but the smoke and cured flavor was great!


Breakfast is served!
 
Wife says I need to get another butt and turn it into tasso again, she's loving what all I'm doing with it. Making a pot of beans tonight with about a pound of tasso in it!

I'm intrigued, so I have to ask. What the heck is tasso?

Looks too good not to know.

A smoked pork strip, think CSR, coated in cure and a Cajun seasoning. Dried a bit and heavily smoked. Good for adding to beans, veggies, etc. not too bad for pan frying either.

I used Len Poli's recipe.
