Sweet-n-Savory Pork Stuffing, Apple/Bacon

    I had 12 huge 1.5" thick pork chops that I wanted to stuff.
    A sweet-n-savory idea of apples and bacon came to mind and I made it happen.
    It came out great with the chops and I'm sure it'd be great in a rolled loin too.

    This recipe makes approx 9-10C of stuffing so you'll likely want to cut it down in size to suite your needs.

    Sweet-n-Savory Pork Stuffing

    Dice 2C sweet onion, 1C celery and 2C cooked bacon, saute in 1-1/2 sticks of butter and approx 2T salt.
    Add in 5C diced apple and then 1-1/4C brown sugar.
    Let the sugar just start to caramelize and the add 2C Panko crumbs.
    Mix well, letting the Panko absorb the butter/sugar, then add in 1/4C finely minced fresh herb, e.g. parsely, sage, thyme or whatnot.
    Cool thoroughly before stuffing chops.


    Stuff the chops.


    Smoke and then finish on the grill.
