I'm going down to Clarksdale for the weekend and today was nice out so why not smoke something. Had some ground beef so I mixed it up meatloaf style and rolled into a log.


Smoked over oak for about an hour then joined by some shrimp.



Some wood grilled asparagus to make it healthy and we're ready to eat.


Sliced and plated with a simple salad. Again, to make it healthy.

Well my doctor wants me to severely cut down on sugars and starch. I asked her if I could still have BBQ and she sai " absolutely, I have bacon almost every day. Fats aren't the problem, sugar and refined starches are. Have all the BBQ you want just don't put it on a bun. "

Thanks Richie, my youngest is currently choosing to not eat mammals or fowl so the shrimp was intended for her. However, the rest of us got a few to round out the plate.

Hmm....her loss. More for you. Great looking plate, except for the asparagus. Never have found a way to fix that stuff that I didn't feel like I was chewing on twigs.
