Been buying the 81 / 19 ( that's how it's tagged ) chubs of ground beef from GFS . It's a great option to grinding your own in todays world . I think I have around 80 lbs in the freezer , but I always save some to do some type of Summer sausage or Bologna .

So awhile back I bought some 100 mm / 4 " casings for doing larger lunch meat stuff . I got a pork butt to grind when I bought the beef , and did a 50 / 50 beef - pork mix of Country style bologna .
No emulsifying . Figured it would be a good time to try the large casings .

I have some small zip ties that I use for some of this , and that zip tie tool
makes it easy . Pulls it down tight and snaps it off .
20261005_072104.jpg

4 lb. chub , beef / pork .
Seasoning mix was ,
white pepper - 4 grams
Coriander - 1 gram
nutmeg - 1 gram
3/4 tsp cure 1
sodium eyrthorbate - 1/2 . I use it to set the color and avoid oxidation .
potato starch - 1 TBL
STPP reduced rate of recommended .
Get it mixed . If it;s not sticky , somethings wrong .
20261004_124043.jpg
Went into the fridge overnight , stuffed the next morning . It was so heavy I had to net it up .
hanging at room temp to warm up .
20261005_073321.jpg

While that was hanging I started on the AC Leggs mix .
The 114 mix is spot on for me . I do add some ginger and caraway seed to it .
So I did 2 - 1 1/2 lb. chubs of all beef . I always divide it out by weight of the bag to how much it seasons and write that on the bag . Bag said 20 grams per lb . , so that's what I used . Added 1/4 tsp ginger , 1/4 tsp caraway and a couple shakes of mustard seed . For the 3 lb. mass I added 1 TBL of potato starch , 1/2 tsp of STPP and 2 TBL liquid smoke . Maybe 1/2 cup water . 1/2 tsp cure 1 .
Mixed and fridge over night .
Stuffed into 2 1/2 casings , and joins the Bologna to warm up .
You want 60 to 90 minutes , I'll leave it hang a couple hours or so .
Made that rack , keeps it simple .

I've been doing this in my SmokeFire pellet grill Just does a great job , and doesn't take all day .
Pre heated to 200 , then set to smoke boost . Lumber Jack comp pellets . I like the B&B champ better ,
but these were open and give good results too . Runs start to finish around
180 / 200 ish . As long as you keep and eye on it , and pull it of when it's at temp it will be fine .

20261005_093755.jpg
The AC Leggs was done first . I just give them a squeeze . If it feels right , I'll use an instant read .
I don't leave a therm in while it's cooking .
Temp was right at 154 .
Pulled and hanging to cool , no water bath . Great color .
20261005_124011.jpg
Went back to check the bologna . I could tell it wasn't quite ready , but wanted to check the temp
to see where it was at .
That net was so hard to get on , that I didn't feel the need to tie it off . When I went to put the therm in I felt it move .
It was like watching one of your kinds being born . Started slow at first , then plop ,,, the netting pushed the chub out and into the bottom of the grill .
So no real choice but to finish in the oven . Already had plenty of smoke anyway .
Pulled around 160 . Water bath to stop the rise in temp .
Hanging to dry . Great color again .
20261005_155044.jpg
Rested in the fridge overnight , sliced some the next morning .
I'll have to say it's perfect for taste and texture .
It's really good . I sliced half and between snacking and sandwiches for
lunch , that half is gone already .
20261006_074822.jpg
Sliced pics of the Leggs didn't come out . Color is way off .
Not sure why . This was the best shot I had .
taste and texture is spot on too . It never lasts long either .
I'll wrap in pink butcher paper and let it ride in the fridge . I don't like to freeze it .
Changes the texture to much for me .

Nice job ! Thanks for the great writeup .

Great looking product. Great snacking and lunch material. Good job.

Looks amazing Rich! I want to try bologna at some point. Bookmarking this. Pretty sure I have red casings for it.

Nice job !
Thanks .

When it's right it's good . I had some red casings , but they were small . Really wanted some of these 4 " , then when I got them I was shocked at how much it was gonna take to fill them . Each one holds 8 lbs .
Perfect for this though . Next time I'll do 3 lbs . and cut them in half .
There's some reall good " bologna " formulas on Marianski's site . I've done several of them .
I'm gonna have to revisit the Mortadella now that I have the big casings .

Nice job Rich, not a bologna bologna fan but looks good. What are the plans for the next 76lbs of chop meat...lol

They look great, nice work. Where did you get th 4" from? Bought yrs ago from sausage maker and never used. They got dry rotted.
About how long did you have to let the big chub go to get to temp? Congrats on the carousel. . .

Oh I see on the bag, they were sausage maker bags. My bad 😲

Great job
Thanks for the comment .
thanks bud .

LOL . I.m just trying to survive the insanity at the Grocery check out . We go through a bunch of ground beef . Had tacos a couple nights ago . Burgers the night before that .
I'm actually hoping for some ravioli this coming week . We'll see .
Gonna be a meat loaf in there at some point . I put 2 - 2 lb . packs of ground pork in the freezer when I did this sausage . I'll mix that with some of the beef .

Nice round of sausage.
Congrats on the feature

Recipe appears to be missing something? That's even flat for my low salt mixes.

GRATS ON THE RIDE RICH, WELL DESERVED AND WITH A GREAT WRITE-UP! I BOUGHT SOME GROUND BEEF LAST WEEK FOR THE FIRST TIME IN OVER 20 YEARS TO MAKE A MEATLOAF. LOOKS LIKE $5.99LB IS THE NEW BARGAIN PRICE IF ONE CAN EVEN FIND IT FOR THAT, CRAZY.

Yeah , didn't notice the salt not listed . I started out by just listing a flavor profile . Then decided to go back and list the amounts . I don't normally do amounts , because I hardley ever weigh any thing but the salt .
The rest is done by eye . I always base the salt on Marianski , which is around 1.8 % . All mine is 18 grams per 2 1/2 pounds of grind .

Thanks Ray .
I've been buying the 10 pound chubs .

Looks like you been working, or is that playing hard.
It's more play than work now . I have a system down , and everything I need to keep it enjoyable .
Wasn't always like that . I think the key is cleaning as you go , and splitting it into a couple days .

What is GFS? I need a zip tie tool! I didn’t know those even existed!! What an educational and entertaining post man……watching your kid being born….LMAO!!!
Great stuff

Sure looks good. I got a deer last week with the bow and am going to make some also. One question : why not ice bath the Summer sausage?

Thanks for the comment .
Just depends on the ice bath . When I do it on the pellet grill it smokes / cooks at a constant start to finish temp . I pulled it at 152 internal temp , so it doesn't really want to carry over .
I also get less shrink this way . If I do it in the MES , it takes a lot longer , and that does get a water bath .

due to time constraints I'm going to mix the meat/seasoning up, let set overnight in frig, then hand mix citric acid in the next day, stuff and smoke/cook. Or would you stuff right away? Been a while since I made any. Ill have to go look at my recipe record book and see what i did last time.
