Been a busy day and still so much to do. I shouldn't have stayed up all night chatting! Ergh ... I'm ready for a nap! I smoked with just apple to have a mild flavor to compare the sausages - used hickory with apple woods after they were done.
Anyway here's a sneek peek about what I'm up to today. Not everything will be smoked today some just need to be brined and packaged or just brined for further processing tomorrow.
Pictures are as follows:
1 Todays meat in the works - 2 17 pound turkeys for smoked turkey rolls, 2 15 pound pork bellies for pancetta and bacon, 11 pound Boston butt for pulled pork, 10. pound brisket (flat for slicing and point for burnt ends), gimmie Lean sauage is an all vegtable sausage that's supposed to taste like Jimmy Dean - it's amazingly good and very close to Jimmy Deans sage sausge. And the Jimmy Deans Hots for the ABTs and snacks.
2 sausage on the left is the Gimmie Lean brand and on the right is Jimmy Dean Hot. The most immediate difference I noted was not the taste but lack of grease. As a said it's very close to Jimmy Dean sage.
3 A boston Butt
4 a brisket separated into flat and point with the good fats and bad fat removed. The good fat I save for later adding to beef sausages.
I also have 3 trays of Crisp-X mix with almonds and ABTs going but didn't get pictures going in.
