Smoking today, eating burnt ends tomorrow

Hello friends! Just joined this forum after reading many of all of your posts to help me begin smoking. Thank you all.

I'm smoking a brisket right now, and I decided to separate the point from the flat before I rubbed or smoked anything. One reason being that I wanna make burnt ends with that point. Here's my dilemma: I'm smoking today for my wife's family and I to enjoy the flat. I want to make the burnt ends for tomorrow (My wife and I both agree not to share them with her family, haha). Do I go through the entire process to completely make the burnt ends? Should I only smoke today, and cut, season and cook tomorrow? What do you think?

I'd cook both days...flat today, burnt ends tomorrow. Don't blame you for not wanting to share burnt ends...some things are just sooo good! :emoji_wink:

I cook the brisket whole and separate the point afterward. Then cube the point the next day and finish cooking for the burnt ends. I love buttery mashed potatoes to go along with them.
