Family coming out to visit for the weekend due to nephew on leave for couple weeks from marines and dads 85th birthday. Full house as everyone staying here. Kids came in from college too. 14 mouths to feed in all. Wife picked up a 20 lb brisket from costco. The prime cut packer was only 10 cents more per pound so went that route. It looked good in the package. Trimmed it up and partially removed the point the night before. Cut off about two pounds of fat. Rubbed it down with my homemade mix.
Onto the smoker at 6 am. It was dark out and pic didnt turn out. Here it is a couple hours in and looking good.
It was probe tender after 7 hours. Smoked it at 250 on the yoder with a tube. Was going to use the stick burner but wanted to get some lake time in. Cut the point off and made burnt ends with it.
Put it into the warmer til dinner at 5. Stayed nice and hot. Sliced it up and chow down. Was only about two pounds left.
Point ready for cubing.
Lots of sides. Green beans, mac n cheese, scalloped taters and baked beans. Poke cake for dessert. Since it was done early headed out onto lake for couple hours. It turned out really good, moist and slight tug to pull apart.
Marine nephew with his niece.
Finished the night and celebrating the bday by the firepit and opened up a bottle of booker noes from 2022 had in the cabinet. Tomorrow cooking up sauerkraut, hot Italian sausage and green chile and cheddar smoked sausages.
