I'm smoking a brisket right now, and I decided to separate the point from the flat before I rubbed or smoked anything. One reason being that I wanna make burnt ends with that point. Here's my dilemma: I'm smoking today for my wife's family and I to enjoy the flat. I want to make the burnt ends for tomorrow (My wife and I both agree not to share them with her family, haha). Do I go through the entire process to completely make the burnt ends? Should I only smoke today, and cut, season and cook tomorrow? What do you think?
