My cousin and family will be in town tomorrow for a weekend baseball tournament. They are coming down a day early to hang out and get some lake time and tubing in. I have a week off between job changes and time to burn. When we bought the vacation lakehouse around five years ago during covid I bought a yoder YS640 so I had a smoker here and kept the lang in kc at our other place. Made it our forever home four years ago as kids were entering HS and sold the other place. Found the convenience of the pellet pooper and pretty good que too good so the stick burner got lonely. I probably only use it a couple times a year. Today is one of them times. Dont get me wrong , the flavor from the Lang is better than the Yoder but convenience and not having to watch it all day wins when you are busy. You also cant go out on the lake with the Lang.

Todays selected meat is a whole packer brisket. Supposed to rain tomorrow so will cook today and reheat tomorrow. Bought it at Costco for $5.89 / lb. and is 17 lbs. will partially separate the point from flat and make burnt ends too. Separating before cooking makes it cook faster and easier to separate when ready.

Cleaned up and ready to go. Used the weed burner to start fire and burn junk off grates. Hoping to settle in between 250 - 275.

Wood pile. Need to do this more often to use it up. Getting a whole apple tree from a friend soon. Also have a dead oak I need to cut down and a couple of pecan trees that need thinning. If anyone near me needs wood, send me a message.

Looks wonderful, and, beautiful place.

Depressing looking at what you paid for it. And that's a choice, not a select. Looks great. Add $3 to $4/lb around here, even at Walmart. Last week somebody in FL said they were on sale for $3.99. Not seen that here in > decade.
 
Beef prices are high but not much I can do about it. Not sure what the prime were priced at since didnt have any this trip. This one has really nice marbling so not too worried about it.

I tend to cook between 235 and 300, depending on what is on the menu. I don’t do overnight smokes. Think you get better fat rendering at the higher temps and shorter stalls.
 
Cooking fast today. 3.5 hours in and hit 165. Rotated it since flat and point were temping a bit different. Took a progress pic.

This one has really nice marbling so not too worried about it.
Yup . There's a scale on all the grading . Some choice are high in that scale right at the line before prime .
Just saw GFS has them on sale for $5.49 . Might have to get one .

Looking good . Almost makes me miss my offset .
