I get so tired of the same food for lunch , pizza, burgers, Heros ... I decided to treat my friend at work to something different.. Soooo a mixed up a gal of Pops Brine two days ago and dropped in some chicken legs. With the brine I added 1/2 cup pickling spices( see we're I'm going?) then after 24 hours
Cold water bath and placed in the fridge to dry for 12 hours until shake in a zip lock with Jeffs rub. Onto the mini at 260 for 90 mins
 
wow!  that skin already looks pretty crispy from the smoker alone!  What was the brine recipe you used?  How did you dry them in the fridge?

I too am a little lost on the pickling spices thing?? I don't do much poultry yet but I am getting ready to purchase a huge batch of chicken quarters since they are on special for $0.28 per pound!!
