I smoked 2 14 pounders for Thanksgiving this year and they came out great. For Christmas I'm smoking 4 and giving them to a local shelter.
I'm just wondering if stacking nearly 60 lbs. of poultry is going to present any problems... uneven cooking etc.
I brined them and used the spadgecock method (which works great) for easy stacking. Just want some input from you pros out there.

the only thing i think you well need to do is flip around the trays for even cooking....i know my gosm has a tendecy to burn things on the lower rack from the direct heat....and my hats off to you for donating to a shelter
 
You are awesome for doing the donation thing! I would move them around a bit at least once during cooking to ensure you don't have one stuck in a hot spot. I would also be careful with the weight. I would not trust 30 lbs on a single shelf in my newer Brinkmann, but would in my older one.
 
They smoked @ 275-300 till the breast read 170... about 4 hrs.

I decided to only smoke 2 at a time. Even though they are spadgecocked, they would have been jammed in the smoker and I didn't want to handle them that much. This way they smoke till there done!

Now thats is a good thing you are doing for the shelter for sure. I think you could stack them and they would be fine. But I see your gonna do only two at a time so it will still work out good too. I yes
