Smoked Brisket on Traeger

I’m 12 hours into my cook today. Smoking is seriously one of the most entertaining things. This is my second brisket but have smoked a few hundred ribs and around 50 pork shoulders. Every time feels like a first, and the process is always a new lesson and challenge.

Grilling is something that you never really master, there’s many new techniques, recipes and meats you can work with.

I will be sure to post the end result, again, it’s my second brisket - bare with me haha

I do 8 pound flats on a green mountain grill. I set it to 210 degrees and once it is at temp I put the brisket on. I go to internal temp of 165 then wrap in foil and go to internal temp till 203ish. I then wrap it all in a towel, still in the foil, and put it in a preheated cooler for about an hour and a half. It usually falls apart after that. Mmmm, now I want some brisket.
