I also blame the rising cost of them (partially) due to more exposure and the popularity of social media.
Every other video is showcasing a
"How to" brisket cook.
Not saying that's a bad thing but a lot more people are learning about the great and mighty king!

Same goes for Tri Tip out here, before it became a thing, most butchers would toss it into the grind pile. Back then TT was one of the cheapest cuts, only those who were in the no would buy them.
