Smoked Beef Bologna

Had this chub of beef bologna vac sealed in the freezer for 6 months.

Time to smoke it.

Cut both ends off. Scored lengthwise.

Rubbed down with pitboss sweet heat rub and some mustard.

In the smoker on smoke for an hour with apple/hickory mix pellets, then heat bump to 225 until it looks good.

In for the ride. Smoked bologna a few times and didn't care for it but was long time ago. I think a bringing up to temp and pellicle might be needed for my MES.

Bologna getting closer. Had to move the vertical under awning more as it just started to rain. About 2 more hours i will put some bbq sauce on it.
