Seasoned these ribs a couple weeks ago and had to postpone my smoke. Pulled them out of the freezer last night and smoking today.

Rain, wind no problem for the WSM!

Going naked low and slow. See ya all in 6 hours!

Smoke away!!!

Settled in at 217. So that's where it's going to ride!

Took longer to get up to temp couldn't figure it out. Realized that one of the lower vent, which I thought was open, actually was closed! Bonehead!

Smoke away!!!

I'm glad to hear that it's not just us FNG's who make silly mistakes.

Right? I know I looked right at that vent and thought it was open! Nope!

Update, TBS, and smells fantastic!

Strayed from my typical cherry and Kiawe. Used Apple and Kiawe this smoke.

SPOG is what's on the meat.

Didn't even knew you had a WSM.

Glad you finally got them on the smoker!

Looking good. How long have they been cooking

HA, I hate long cooks.   PP is my only long cook and I do them overnight so its a short cook.
