Every year I usually bring a bunch of goodies to my older son's Memorial Day party; smoked chicken, pulled pork, ribs, summer sausage, etc; at least one or two of the above.
This year is different, however. Last Tuesday Linda fell during the night (getting up to go in the dark and fell) and broke her leg. She's ok, but immobilized; all my time has been taken up tending to her and the house. Second, our company decided all the managers 'needed' to work Fri, Sat, Sun, and Mon. of the holiday, full shifts. So between the two, needless to say, I had almost no time to prepare anything. Well, with the exception of my once-every-two-week ham smoke for my lunch.
I buy a Corn King ham (WalMart, $6 for 5 lb. ham) cut it down the middle and re-smoke it and cut it up for my lunches; cheapest cold cuts you can find! I'd just smoked one last Monday night and less than a ¼ of it was gone. So, out it came this morning and I sliced it all, then buffetted it on a platter. Add some mustard and crackers on the side, and voila, a contribution to the party! Plus, both boys were over Sat. visiting their mom while I was at work and got into it and sliced off some for sandwiches and both remarked how good it was, so this should be a hit at the party nonetheless!

Should add that the slicing was all done by my left hand, which was affected by my stroke last fall - it's starting to come back!
