Every year I usually bring a bunch of goodies to my older son's Memorial Day party; smoked chicken, pulled pork, ribs, summer sausage, etc; at least one or two of the above.
This year is different, however. Last Tuesday Linda fell during the night (getting up to go in the dark and fell) and broke her leg. She's ok, but immobilized; all my time has been taken up tending to her and the house. Second, our company decided all the managers 'needed' to work Fri, Sat, Sun, and Mon. of the holiday, full shifts. So between the two, needless to say, I had almost no time to prepare anything. Well, with the exception of my once-every-two-week ham smoke for my lunch.

I buy a Corn King ham (WalMart, $6 for 5 lb. ham) cut it down the middle and re-smoke it and cut it up for my lunches; cheapest cold cuts you can find! I'd just smoked one last Monday night and less than a ¼ of it was gone. So, out it came this morning and I sliced it all, then buffetted it on a platter. Add some mustard and crackers on the side, and voila, a contribution to the party! Plus, both boys were over Sat. visiting their mom while I was at work and got into it and sliced off some for sandwiches and both remarked how good it was, so this should be a hit at the party nonetheless!
Some pics:

Should add that the slicing was all done by my left hand, which was affected by my stroke last fall - it's starting to come back!

First of all, I wish your wife a speedy recovery and congratulate you for being there while you can with work and all. Secondly, I'm glad yo read that your left hand is starting a come back. Very nice job on that ham, thanks for sharing the Q View.

Great job on the slicing and plating! Hope you and your wife have a full and speedy recovery

Nice job on the ham and the presentation looks awesome...Hope the wife heals up soon...

Sorry to hear about your wife- hope she heals up quickly! Same with your hand, though you did a real nice job on slicing the ham. Very nice platter.

Hope you get some sort of comp-time or pay for your holiday sacrifice, too.

I hope Linda has a speedy recovery and I'm glad to hear of your continued recovery as well. The ham looks great very nice job.

Hey Pops,

Best wishes for a speedy recovery on the wife's leg. I have to say, you would be welcome at any party I threw with a plate-o-ham like that (well, you would be welcome anyway, but with a plate like that, we'd be thrilled!). lt is cut perfectly, and I bet it is delicious too. it is a beautiful presentation.

I will throw one in the smoker next time I fire it up, as I want to cut down on my lunch expense too (I usually eat out). Any particulars on smoking them?
