Snagged a discounted $5/lb pack of beef ribs on the sell by date Thursday and threw them in Pop's brine with pickling spices. The "half butt" went into its own last Sunday with a couple dried cayennes.
Hickory chunks and grocery store brand briquettes on sale for $5/16lb a while back on my PBX UDS. Did not fully fill up the basket and seem to always have issues with this charcoal dying out. Still can't complain at all for $5/bag, just had to babysit and crack the lid a few times. I was hungry and wrapped the ribs at 3hrs, pulled at a little over 4. I've never brined them before and flavor was good but could have used a little more time.
Never used the seasoning salt (only went on the pork), but the sauce is popular here and long-standing. Only sauce I've ever seen sold in glass 64oz growlers. Lol. Didn't come through much, but was good on the green beans and I'm sure will be on other veggies and potatoes. Definitely nowhere near the heat of my rub even with the cayennes. Only the slab and the little strip under the horn actually made it into to the fridge. Will get a few lunches out of it, still. ~3lb before cooking.
