Yup

PP no sauce or rub, just plain old hickory smoked butt. 90/10 GB so i added some fat so the PP dont zap the moisture.

I just eyed everything meat wise. 2 T owens bbq SS mix, just a tad over 1/4 tsp cure 1.

Mixed and just under 1T water. In the fridge lastnight


Hand stuffed this morning.



Had to use old betsy 1 & 2. Chub is 1 1/4lb. No heating the smoker.

 
Watching for sure.

Hand stuffing,   something I haven't tried but I have some huge casings I could try it with.
 
Interesting, I'll watch thus one play out. Good idea i'm thinking.

Put a pan under the PPSS chub just in case.

PP SS Turned out better than i thought.

SS taste with a deep smoky flavor.

Casing did not stick which is good.


I think mixing the PP in is worth a 5lb batch. Not bad for hand stuffing.....EH


Took some to my wife n the office. She said i dont taste any PP but i do the smoke, Well maybe more next time
